  1. 1/2 cup short grain rice
  2. 2 litres cold water
  3. 3 tablespoons tomato paste
  4. 1 cup tahini
  5. 1/4 cup lemon juice
  6. 1 clove garlic, peeled and minced
  7. 1 bay leaf
  8. 1 teaspoon salt
  9. Pinch of fresh flat leaf parsley, chopped
  1. Pour the water into a large cooking pot
  2. Add the rice, garlic, tomato paste, salt and the bay leaf to the pot
  3. Cover the pot and bring the water to a boil over a medium-high heat
  4. When the water begins to boil, lower the heat and remove the cover
  5. Allow the rice to simmer for a further 15 minutes
  6. In the meantime, place the tahini and lemon juice into a medium-sized bowl and stir together
  7. When the rice is tender, remove and discard the bay leaf
  8. Take one cup of the hot water (but no rice) and place it into the bowl with the tahini and lemon juice
  9. Whisk the hot water and tahini together until smooth
  10. Pour the tahini mixture back into the pot and continue to cook, uncovered, for a few minutes, until the water reaches boiling point again
  11. Turn off the heat as the soup is ready
  12. Transfer the soup into bowls
  13. Garnish each bowl with some of the chopped parsley
